Haloumi Salad

This is a salad I discovered the other day at a restaurant so I don't have exact measurements.  I decided to add it today because I made it for lunch. I didn't have green peppers of cucumbers so you won't see that in the salad but it tasted great all the same!!

Mixed Salad leaves
Haloumi Cheese
1/2 Onion thinly sliced into rings
Cucumber
1 green pepper cut into rings
Peppadews
Bacon cut into thin strips grilled / fried till crispy
Macadamia nuts
Almonds
Honey mustard dressing

Method
1. Cut Haloumi Cheese into squares and fry until golden brown, allow excess oil to drip off on a rollertowel
2. Cook bacon until crispy.
3. Slice cucumbers, peppadews, onions, greenpeppers
4. Chop up nuts
5 Arange salad leaves and add rest of ingredients as desired and when ready to serve add dressing.

Tangy Noodle & Ham Salad

120 g Pasta shells cooked (I also usually cook about 250g)

200 g Ham cubed

410 g tin sliced peaches

½ Green pepper

1 Onion diced (I use ½ onion)

150 ml Mayo

5 ml Curry powder

10 ml Honey

20 ml Peach juice (I usually add a little more just to take the bite out of the curry powder)

Method

1.Combine pasta, ham, peaches, green pepper and onion.

2.Mix the remaining ingredients and pour over salad.

3.Toss.

I don't think this is exclusively South African but it is one of my favorites.

Vetkoek

link href="file:///C:%5CDOCUME%7E1%5COwner%5CLOCALS%7E1%5CTemp%5Cmsohtml1%5C01%5Cclip_filelist.xml" rel="File-List">

Vetkoek (Fet-cook / Fat cake)

1 cup cake flour
3ml salt
5ml Baking powder
1 egg
milk
oil (for deep frying)

Method

Sift the dry ingredients into a bowl
Beat the egg lightly in a cup and add to the dry ingredients
Add sufficient milk and beat till a smooth batter
Heat the oil in a pan, and drop large spoonfuls of the batter into the hot oil (be careful)
Fry, turning them over now and then, until golden brown
Cut open, butter, and fill

This is a very traditional South African food. Low cost but I think unhealthy because you have to fry the dough.

It is also extremely versatile. You can add sweet or savory fillings or just eat it as it is...especially if you have a bread fetish.

Many of the people who live in the townships by these as part of their breakfast or mid-morning snack with their tea.

"Vetkoek (fet-cook) - "Fat cake" in Afrikaans, vetkoek is a doughnut-sized bread roll made from deep-fried yeast dough. Mainly served with a savoury mince filling, it's artery-clogging and delicious."
