Simple Spanish Rice

Here's a great recipe to try when you're looking for something a little more interesting than plain ole' rice. It's moist, but not mushy and has wonderful flavour! My husband got really excited last night when he saw me making this! We enjoyed it along with grilled chicken and steamed broccoli. Mmmm!



2/3 cup chopped green pepper

1 large (or 2 small) tomatoes, peeled, seeded and diced

1/2 cup finely chopped onion

1 T. olive or vegetable oil

1 cup uncooked, long grain rice

2 cups chicken broth

1/2 t. salt

1/4 t. pepper



In medium saucepan, saute green pepper, tomato, and onion until tender. (Stirring often.) Add rice; saute for 2 more minutes. (Again, stirring almost constantly.) Stir in broth and spices. Bring to a boil. Reduce heat; cover and gently simmer 25 minutes or until rice is tender. Makes 4 servings.
